Beginning of the Career

Elizabeth spent a few years away from the ranch for her higher education in a boarding school in Monterey and later was admitted to Kenyon College in Ohio, where she pursued Spanish History as a major. 

After completing her degree, she moved to New York, where she joined MTV’s News and Documentaries and PBS. Later, she was offered a job as a scriptwriter in Los Angeles, which she accepted. At the weekends, she would travel back to San Julian and spend her time indulging in ranch activities. 

Somewhere between 2006 and 2007, she realised her love for ranch life and decided to commit herself entirely to San Julian. From there, she started to build a life that would bring more glory to the legacy passed down through generations and founded the Rancho San Julian Beef Company.

While working on the Ranch and teaching people about ethical farming, fair animal treatment and selling organic grass-fed beef to customers, she also had other plans. In 2017, she launched her recipe book with the name “The Ranch Table,” and this became a breakthrough in her career. The book was sold all over the world and has recipes for home cooking.

While on an excursion regarding a cattle branding event in 2006, Elizabeth met Austin Campbell, who was also a cattle rancher.
